How it's made
- Weigh your brisket to calculate exact ingredient amounts.
- Mix all dry cure ingredients together.
- Rub cure mixture over the entire brisket, covering all surfaces.
- Place in a vacuum seal bag or large zip-lock, pressing out air. Refrigerate.
- Cure for 1 day per pound of meat. Flip daily. A 10 lb brisket needs 10 days.
- After curing, remove and rinse thoroughly under cold water.
- Soak in cold water for 2 hours, changing the water every 30 minutes to draw out excess salt.
- Place the corned beef in a large pot and cover with fresh cold water.
- Bring to a boil, then reduce to a gentle simmer. Cook for approximately 1 hour per pound until fork-tender.
- Optional: Add carrots, potatoes, cabbage, and onions to the pot during the last 30-45 minutes for a complete meal.
- Let rest 15 minutes before slicing against the grain.
