The meat

How it's made

  1. Grind pork and fat through a 1/4" plate. Keep very cold.
  2. Mix all dry seasonings together. This recipe uses layered heat: cayenne for immediate burn, red pepper flakes for bursts of fire, and black pepper for background warmth. Adjust cayenne to taste.
  3. Add seasoning and ice water to ground meat. Mix until well combined with good protein extraction.
  4. Stuff into natural hog casings (32-35mm). Twist into 6" links.
  5. Refrigerate for a few hours to let the spices meld.
  6. Vacuum seal and freeze for storage, or grill over medium heat, turning frequently, until 160°F internal.
  7. Rest 5 minutes before serving.

  • 100% Pork Butt or Pork Shoulder works great on its own — it has the right lean-to-fat ratio naturally.
  • Keep meat very cold during grinding and mixing
  • Do not overwork the meat or it will become tough
